Naa Korkoi Addo

PhD Researcher

Naa Korkoi Addo is a first-year PhD student  at the department for Computer science and Information systems at the University of Limerick where she is supervised by Dr. Patrick Healy. Her research is in the field of Artificial Intelligence in Food Process Engineering. She will be exploring and adapting AI methodologies to increase the efficiency of food plants by maximizing the use of their raw materials thereby reducing food waste. Naa Korkoi is a young Food Process Engineer  whose personal experience with food backed by the knowledge of how it affected innocent people globally yielded a desire to not only try out new recipes in the kitchen but to also learn the associated science and engineering technologies that can be used in increasing safe food supply (from raw to processed) to meet the ever growing demand. Naa Korkoi had her undergraduate education at the University of Ghana, Legon where she held a number of leadership positions including Women in Engineering president from 2017-2018.  Naa Korkoi holds a Bsc. in Food Process Engineering. Her thesis was focused on using cashew nuts, an under-utilized cash crop in her country to increase the yoghurt population by making yoghurt for vegans, lactose intolerant and persons allergic to cow milk. She had the opportunity for her final thesis to be published in the Ghana Science Association book of abstracts.
She worked in the Milks and Infant cereals plant of Nestlè Ghana Limited.(Tema factory).
Prior to her CRT-AI funded PhD programme, Naa Korkoi served on various projects including Real-time AI driven diagnostics and behavior change to improve adolescents’ diets and nutrition in urban Ghana and Viet Nam- funded by The International Food Policy Research Institute (IFPRI), Developing antenatal care intervention to reduce the prevalence of Anaemia among pregnant women in Ghana- a joint project with the University of Lancashire, Preston, England, Effect of composite foods powder intake on the nutritional Anaemia and growth status of young Ghanaian children under five years- funded by the Nestle Foundation at the Nutrition department of Noguchi Memorial Institute for Medical Research.
